Not many people would claim that their trifle is good for blood pressure. But this superfood version is loaded with flavour and potassium, which means this trifle packs a nutritious punch.

Ingredients

  • 6 biscotti, about 170 g (6 oz)
  • 1 can (425 g/15 oz) pitted cherries in juice or syrup
  • 151 g (2/3 c) blueberries
  • 30 g (2 tbsp) cornstarch
  • 30 g (2 tbsp) cocoa powder
  • 314 mL (1 1/3 c) low-fat (1%) milk
  • 5 g (1 tsp) vanilla extract
  • 30 g (2 tbsp) sugar
  • 56 g (1/4 c) white chocolate chips

Directions

Preparation: 10 minutes. Cooking: 5 minutes. Serves 4.

  1. Break the biscotti in half and divide them among four dishes, three halves per dish. Drain the cherries over a bowl to catch the juice. Spoon the juice over the biscotti and let them soak for five minutes before topping with the cherries and blueberries.
  2. Whisk the cornstarch and cocoa powder with a little milk in a small pot. Gradually whisk in the remaining milk. Use a spatula to scrape up any cornstarch from the bottom of the pot.
  3. In the pot over medium to medium-high heat, bring the sauce to a boil, whisking continuously. Reduce heat and simmer, stirring gently, for two minutes. Whisk in the vanilla extract and sugar.
  4. Pour the sauce over the fruit. Sprinkle with chocolate chips and use the tip of a knife to swirl the chocolate around as it melts.

Chef’s tips

  • Be sure cherries are pitted before you buy them. Some bottled and canned cherries contain pits.
  • Add sugar to the milk and cocoa sauce at the end of cooking. It helps to prevent it from browning and sticking to the pan.
  • The milk and cocoa sauce may seem too thick before the sugar is added. But as the sugar melts, your sauce will thin to the proper consistency.
  • Instead of chocolate chips, break a bar of chocolate into squares, drop them into a strong plastic bag and use a rolling pin to crush into pieces.
  • Use amaretti cookies or almond macaroons instead of biscotti.
  • Try flavored biscotti, such as almond, chocolate or pistachio.
