Proprietor Chris Liao graduated from the SAIT Polytechnic cooking program with the intent of opening a restaurant with his wife Jenni Giang. He missed the food of his native Taiwan and saw a potential niche here. Until 303 Fusion Kitchen opened its doors in June of 2014, the city did not have a restaurant serving Taiwanese food.
It was the tastes of Taipei’s food stalls that Chris envisioned for the restaurant’s menu. Jenni describes the adventure of eating in what is essentially a big, open-air buffet, “You walk down the street and there are all these little vendors where they sell one or two specialty items. You would go and eat everywhere on the street because everything comes in smaller portions.”

For example, the sweet, salty and spiced karaage chicken is kind of like popcorn chicken and the sweet yam fries are served with plum sauce. Another bestseller is the restaurant’s selection of fried rice crepes stuffed with oysters, chicken or beef.
